Fig Leaf Dolmas

  • Fresh fig leaves
  • Dried figs (soaked or partially dried)
  • Fresh Figs
  • Red Onion
  • mint
  • Quinoa
  • Allspice
  • Pine nuts
  • Chicken broth
  • Quinoa

Pick fresh fig leaves and wash them thoroughly.  Massage them with coarse salt.  I recommend sprinkling the salt on one leaf and rubbing it together with another.  The goal here is to reduce the rough texture of the leaf.  Boil some water and add olive oil and some salt.  Add the massaged fig leaves to the boiling water and leave there until the leaves become soft enough to use as your Dolma wrappers.

Follow Quinoa directions and substitute chicken broth for water, throw in a minced fresh fig for taste. Add a little bit of allspice to the Quinoa for taste.  Blend ligthly together, pine nuts, mint and dried figs. Chop the onion up and carmalize it a bit. Maybe chop up some fresh figs and add them if you are in the mood. Mix all of this together  for your stuffing.

Use a little bit of stuffing on each fig leaf and roll up like a little burrito.
